Lemon Bars
Ingredients
| Flour | 1 cup | |
| Butter or margine | 1/2 cup | |
| Confectioner's sugar | 1/4 cup | |
| Eggs | 2 | |
| Granulated Sugar | 1 cup | |
| Baking powder | 1/2 tsp. | |
| Salt | 1/4 tsp. | |
| Lemon juice | 2 tbsp. |
- Heat oven to 350°
- Measure flour by dipping method or by sifting. Blend flour, butter, and confectioner’s sugar thoroughly. Press evenly into 8″x8″2″ pan. Bake 20 minutes.
- Beat rest of ingredients together. Pour over crust and bake 20-25 minutes more. Do not over bake!
The filling puffs during baking but flattens when cooled.
