Griddle Cakes (Pancakes)
Ingredients
| Flour | 1 1/2 Cups | |
| Baking Powder | 3 1/2 tsp. | |
| Salt | 3/4 tsp. | |
| Sugar | 3 Tbsp. | |
| Egg, beaten | 1 | |
| Milk | 1 1/4 Cup | |
| Melted shortening or oil | 3 Tbsp. |
Mix dry ingredients together. Add rest of wet ingredients, plus 1 tsp. vanilla. Mix until smooth. Make sure griddle is hot. Test by dropping a few drops of water on it. If the griddle sizzles, it is ready. Spoon or pour batter onto the griddle, when batter bubbles, turn and brown the other side. Makes a thick pancake. If a thinner pancake is desired, add another 1/4 cup milk.
