Lemon Bars

Lemon Bars

Ingredients

Flour 1 cup
Butter or margine 1/2 cup
Confectioner's sugar 1/4 cup
Eggs 2
Granulated Sugar 1 cup
Baking powder 1/2 tsp.
Salt 1/4 tsp.
Lemon juice 2 tbsp.
  1. Heat oven to 350°
  2. Measure flour by dipping method or by sifting. Blend flour, butter, and confectioner’s sugar thoroughly. Press evenly into 8″x8″2″ pan. Bake 20 minutes.
  3. Beat rest of ingredients together. Pour over crust and bake 20-25 minutes more. Do not over bake!

The filling puffs during baking but flattens when cooled.
